Peach Pie


This peach pie is another test recipe for Julie Hasson at Everyday Dish. The lattice crust wasn't actually a part of the recipe, but I recently saw them make one on America's Test Kitchen and I wanted to try it for myself (they used a ruler when cutting the strips on ATK, so theirs came out a bit neater than mine). Peach pie just seems like a perfect summer dessert, although using my ancient oven that heats up the whole apartment probably doesn't seem like the perfect thing to do in summer. I had to use frozen peaches for this because we don't have much to choose from in the way of fresh peaches around here this year. Sadly, there was a late frost that killed off most of the peach crops in Georgia and South Carolina. The only peaches I've found in stores around here have come all the way from California. I tried one anyway, because I really love peaches, but it just wasn't the same. *sigh* Maybe next year....in the meantime, I'm good with this pie made from frozen peaches. It tasted great, and I imagine it would be even better with fresh peaches.

Looks great! I've always wanted to try making a lattice top, they make everything look so fancy and professional...

Love the lattice work. Thanks for stopping by my blog. It is a blast testing recipes. I just thawed out some frozen berries to hopefully make some individual berry pies tomorrw. The family is certainly enjoying the special treats.

I am glad to hear that the frozen peaches worked out for you. The family will be glad to here that the end of peach season does not mean the end of pies.

Frozen peaches worked, but the pie had to cook for a lot longer. I cooked it for 20 minutes longer, and it actually needed even more time. When I made the bumbleberry pie, I used frozen berries and really didn't need to thaw them. I only thawed them a tiny bit because the strawberries were kind of big and I wanted to slice them in half.

Hey, I just now saw your comment - I think a little more lemon juice would work, plus maybe a few extra grates of zest?

i agree, i live in ga, and the peaches from CA just aren't the same. lately they've been kinda mealy and not at full of the juicy chin dripping peach goodness :(

Man, am I sorry I haven't visited you in a while! Your summer foods look amazing. I've been lucky to get great local peaches this summer and agonize over cooking them or eating them fresh.

Your pies and burgers are making me hungry!

You are so much better than me at testing- all your pies look so good, and I haven't even gotten around to one yet. I love the lattice top, too. Yum.
