I did something silly at the grocery store recently. Even though Texas Pete hot sauce has never failed me, I bought the generic stuff because it was cheaper (not that Texas Pete is all that expensive). Little did I know that the generic stuff has no spice to it at all. It shall henceforth by known as "not hot sauce". So, these potatoes tasted great, but it was all tang and no heat whatsoever. I'll definitely be making them again, but with a different hot sauce in the future.

Pizza and Blueberry-Oatmeal Muffins
Blueberry-Oatmeal Muffins
Yield: 12 muffins
4 TB ground flax seed whisked with 6 TB water
1 cup oatmeal
1 cup plain soymilk
2/3 cup sugar
2 ts vanilla extract
1/2 cup vegetable oil (or 1/4 cup veg. oil and 1/4 cup applesauce...I was just out of applesauce when I made these)
1 1/2 cups all purpose flour
3 1/4 ts baking powder
1 ts cinnamon
1 cup frozen blueberries
Preheat oven to 400 degrees Fahrenheit. Grease muffin tins.
Stir together oats and soymilk. Add sugar, vanilla, flax mixture, and vegetable oil. Combine flour, baking powder, and cinnamon in a separate bowl. Add to oatmeal mixture. Stir in blueberries. Divide batter into the muffin tins. Bake 20 minutes. Let cool in pan for a few minutes, then transfer muffins to a cooling rack and let cool completely.

Pizza stones are awesome!

I finally got a pizza stone. It's official: I'm in love. This made the most perfect pizza yet. Instead of the usual quick pizza dough recipe that I normally use, I made the recipe from Vegan with a Vengeance. It was awesome. It made enough dough for two pizzas, so I froze half of it and we'll have another pizza soon. I'm not actually a big fan of the faux pepperoni on here, but we had some to use up. I never ate pepperoni (or any other pork product) growing up, so one day recently when I had a coupon, I decided to try the fake stuff. Now, I have absolutely no idea if this tastes anything like real pepperoni, but I really don't think it adds anything special to the pizza. It also tends to burn, which my boyfriend says is because the real stuff is much fattier (yuck!). The soy cheese melted soooo much better on the pizza stone than it ever has before. Yum!
