Chana Masala with Seitan and Muffins That Don't Really Taste Like Donuts

We are going to Nashville for the weekend and I like to bring some food with me, just in case. My boyfriend's momma is good about making food I can eat, but I like to bring stuff with me, too, as I really don't like being a bother. I had some seitan to use up, and remembered that I had a box of chana masala spice mixture hanging out in the pantry. Hence this Chana masala with seitan thing-a-ma-jig that I came up with.

Probably not very authentic Chana Masala with Seitan

2 tsp Earth Balance Whipped (could use regular EB or olive oil)
1 small onion, diced
2 cups seitan, chopped
2 cloves garlic, minced
1 15 oz. can of chickpeas
1 28 oz. can of diced tomatoes
3 tsp chana masala spice mix (mine was by a brand called Roni...I found it at the health food store)
1 tsp chili powder

1. Melt Earth Balance Whipped in a large saucepan over medium heat. Add diced onions and cook until translucent.
2. Add chopped seitan and cook, stirring occasionally, until it begins to brown. Add minced garlic and cook until fragrant (only takes 30 seconds or so).
3. Stir in the chana masla spice mix and chili powder. Reduce heat to low and simmer for 20 minutes.
4. Serve over rice.

This rather odd-looking picture is a Muffin That Taste Like Donuts from Vegan Vittles. These aren't bad, but by no means do I think that they taste like donuts. I really don't get the comparison. With the small amount of sugar in the recipe (2 TB sugar and 1 TB of maple syrup per 6 muffins), I don't see how they could possibly wind up tasting like donuts. I will finish these, but I'm not sure I'd make the recipe again. I'm a blueberry muffin kind of girl.

I've been craving Indian food lately and your Chana Masala recipe looks very simple and easy. Right up my alley.

I hope you have fun with your in-laws this weekend. Nashville isn't a very vegan-friendly place but if you need restaurant suggestions, let me know. There are a few that we've found will accomodate us.

Hi Laura,

I live the opposite direction from Smyrna and I’ve only lived here for a year so I don’t have a lot of suggestions for you in the Smyrna area.

For quick Mexican food we enjoy Blue Coast (which you’ve already found), Moe’s Southwest Grill (probably our favorite), and Baja Fresh (which we had in CA and loved – we get the Dos Manos, no meat, no cheese, no sour cream, add guacamole and it’s big enough for 2 people for only $6 with chips).

The closet I know near you would be Murfreesboro (which should only be about 15 minutes from Smyrna).

For Asian, a safe bet is Pei Wei. Pei Wei is the casual version of PF Changs and it’s really quite delicious and very reasonably priced. You can also try Fuji-noodles (veg stir fry, veg sushi rolls) or Sakura Japanese in Northfield Plaza (great variety of veggie rolls, miso soup, and stir fried veggies from the Hibatchi grill).

Also in Murfreesboro are Mellow Mushroom (near MTSU), Clay Pitt Indian Cuisine, Jason's Deli (fantastic Salad Bar with lots of great raw veggies and the green mix is organic! The tomatoes are ripe and super tasty! They have a bean salad that includes soybeans. Overall: super nice and its "all you can eat" for only about $6.).

I’ve never actually tried these two African restaurants but I’ve read terrific reviews and both of them are supposed to be vegan friendly. I can’t wait to try them.

LALIBELA (probably about 20 minutes from Smyrna)
Named after a town in the highlands of Ethiopia, Lalibela occupies the building that formerly housed Nashville’s first Ethiopian eatery, Addis Ababa. All dishes are served atop a large round of damp, spongy, skillet-cooked bread called injera, and they include the selections typically found at Ethiopian restaurants. Vegetarian and vegan friendly.

HORN OF AFRICA (probably about 15 minutes from Smyrna)
The original owner of Horn of Africa introduced Ethiopian food to Nashville nearly a decade ago, providing warm and easy access to an unfamiliar cuisine. Seble Sebsebie purchased Horn a few years ago, and she has maintained the founder’s commitment to a pleasing environment, quality food and friendly service while expanding the menu to include more wots, kitfo and fitif, as well as more vegetarian/vegan choices, all served with the traditional spongy injera bread. Domestic and imported beer available.

Yep, I made those muffins a couple of years ago with high hopes, which were cruelly dashed upon first bite. :-) Not bad muffins, just nothing donutty about them, I agree. I haven't made them again, I have too many other good muffin recipes. Have a good trip. :-)

I'm more of a chocolate chip muffin kind of girl, but I must admit I was intrigued when I saw her muffin/donut recipe in the book. good to know it's not worth bothering with it. and kinda sad too. bah.
