A Rare Salad

I don't eat a lot of salad. I don't know why, as I like it just fine. Sometimes I get salads at restaurants, but rarely ever do I make them at home. I've been eyeing the Caesar salad recipe in Veganomicon, though, and I finally got around to making it today. The only other time I've tried capers (which are in the salad dressing), I didn't like them. It wasn't just a mild dislike, either. I found them completely unappetizing. Nevertheless, I got it in my mind that I wanted to try this recipe. I have no idea whether or not I still dislike capers on their own, but I loved this salad dressing. I never ate Caesar salad before going vegan, so the only thing I have to compare this to is the vegan Caesar dressing at a local restaurant called Sunspot. It's been awhile since I had that stuff, but I think I like this recipe better. It's creamy and tangy and, well...just plain good.
I made the roasted garlic croutons per the Veganomicon recipe as well, but I used cracked wheat bread. I was going to buy French or Italian bread when I went grocery shopping, but all the stuff that Earth Fare had, which they supposedly baked in-house, contained L-cysteine. Seriously, Earth Fare.....what gives? Is that really a necessary ingredient? (Hint: the answer is no.)

What is l-cysteine made of? I know it's an amino acid. I take an l-lyseine supplement, and I've been cringing at the idea that it might be animal based. What do you think?

I've never been to Earth Fare, but I do go to the Three Rivers food co-op. Ever been?

Oooh, I haven't spied this recipe in Veganomicon yet! But I used to love ceasar salads long ago... and I have a jar of capers in my fridge just BEGGING to be used!! ;)

This was one of the first recipes I tried out of the Nomicon (even before the Chickpea Cutlets!)...and it's sooo good. I was leary about capers as well. I'd never tried them because they look like giant peppercorns. But I ended up eating some straight from the jar while making the dressing, and I was pleasantly surprised.

Same here - I usually don't eat much salad, either, but I certainly enjoy the foodstuff. Ceasar dressing is incredible - good choice!

I'm so glad you posted this. My own only experience with capers was much the same. So bad that after two bites I realized I wasn't going to be able to just eat around them... the taste had permeated the entire dish. While I am in the habit of trying everything over again, I've not considered giving capers another try. Yes, it was that bad!

Based on this post I am going to try again. After all, I'm all about adventure in food and experiencing as much as I can.

I've never seen l-cysteine in bread ingredients. It's probably there to replace something that you really wouldn't want to eat! Home baking is really the answer.

L-Cysteine is an amino acid added to help bread products keep shape to things like donuts bagels etc. It's made out of different animal bi-products, and a large amount of it actually comes from human hair. In China they pay the pooor people money to shave their heads and take their hair. It's horrible AINT IT?
