Black-Eyed Pea and Quinoa Croquettes with Mushroom Sauce

Yet another fabulous recipe from Vegan With a Vengeance. The mushroom sauce is particularly awesome. The croquettes were fun to make, and I like how the bread crumbs on them make them look like toasted coconut-covered marshmallows. I hadn't made quinoa in a longgggg time, but this recipe reminded me of how much I like it. It has much more protein and calcium than most other grains, so I definitely need to start using it more often.

I'm working hard on using more quinoa in my meals too. it's an "appearance" thing, that bothers me with it. but the picture of the croquettes convinced me!

ohh I tried those once... I seem to recall it was a bit of work.. but, I really liked them... The kids not so much.. try try again,huh!

I was expecting my non-vegan boyfriend to be a little scared of the quinoa, as he's never had it before, but I don't think he even noticed that it was something new on his plate. Basically, I think I can cover anything in this mushroom sauce and he'll happily eat it!

Ohh, I do enjoy mushrooms. I think I'll go mark that recipe in my copy of VWaV.

I've never cooked quinoa before (or even eaten it) but I've been hearing so many good things about it lately that I'll have to give it a try! I love getting to cook and eat so many new foods.
