Chickpea Cutlets=Love

These are the famed chickpea cutlets from Veganomicon. Somehow mine never look like everyone else's, but we like them as is. This time I baked them rather than pan-frying them. It's not pictured, but I served it with our favorite mustard sauce (dijon mustard, vegan mayonnaise, agave nectar, sriracha sauce, and just a touch of hot sauce). The roasted potatoes (and onions and garlic) were made by my boyfriend. The green beans came from a can. One of these days I'll learn to cook my own green beans. I was going to serve these with the home-style potato rolls from Veganomicon, but I wasn't feeling well and took a nap when I should have been preparing the yeast dough. I still want to make them, though. I saw some pictures of the potato rolls somewhere (can't remember where or I'd share the link with you) and it really made my mouth water.

Do you live in/around Knoxville? There *is* a restaurant in Knoxville called the Tomato Head that is basically vegetarian. They may serve a little chicken or something, but they have tofu offerings, soy cheese for their delicious pizzas, and a vegan cupcake option among their baked goods. (Haven't checked if their pizza dough is vegan yet.) You should really check it out if you're in town.

The cake in the previous post looks lush, by the way... :)

Yes, I live in Knoxville. I've been to Tomato Head, but it's been a longggg time. Since I like to cook so much (and trust that what I make is vegan, whereas I have my doubts about some of the local restaurants), we don't really go out to eat all that often.

I'm crazy for those Chickpea Cutlets. I just made the leftovers into a sandwich and I might make more tonight just to have to snack on during the week.

I tried the Home-style potatoe rolls yesterday and even though it is a little time consuming, the rolls are totally worth it. They are like tiny loaves of bread and go great with soup.
